LEMON CURD
What is it?
Lemon curd is a solid, spongy and smooth, spreadable
cream with a magnificent tart yet sweet flavour. The most excellent lemon curd
is that with the tint of the sun, it adds a sweet-sharp leak to pancakes, scones, or a
slice of toast.
Lemon Curd was invented in the 1930s by Australian chef, Herbert Sachse.
